Ingredients
- 1 Tbsp Moccona Espresso Style Coffee
- 50ml hot water
- 100g butter
- 100g brown sugar
- 80g white sugar
- 1 Pc egg
- 280g flour
- 1 Tbsp yeast
- 200g chocolate chips

Preheat oven to 180°C

Prepare the Espresso: combine 50ml of boiling water with 1tbsp of Moccona Espresso Style Coffee and stir to dissolve.

Melt the butter in the micro-wave. When melted, add the Moccona Espresso Style Coffee and stir well.

Add brown sugar, white sugar and the egg in a large bowl. Mix well, Add flour and yeast, and stir well until combined.

Add chocolate chips and mix everything together.

From the dough mix, from rough ball shapes then press into a cookies onto a baking tray lined with parchment paper.

Bake for about 13 to 15 minutes.
